Oh, me too, Anne of Green Gables. Living on the Gulf Coast of Florida is an absolute gift. However, the hot temperatures can go on, and on, and on.
We don’t normally feel real Fall temperatures until late October and then it seems as if overnight it’s winter. I have never lived anywhere that the weather surrenders to the four seasons.
It’s either cold or it’s hot with a few sprinkled in days of beautiful Fall or Spring weather with no humidity. But still…. I love Fall. I become so nostalgic in October.
I get so excited about putting out all of my pumpkins and Fall decorations and I look forward to the first cool mornings, apple pie, football, and bonfires. What’s not to love about this season?
My mom shared the most easy apple pie recipe with me. It only takes minutes to put it together and it tastes delicious. Enjoy.
Mom’s Apple Pie
Ingredients
5 or 6 apples sliced thin
1 C Sugar
½ C Flour
1 tbs lemon juice
1 tbs apple pie spice
Butter
2- “roll out” pie shells
Instructions
- Place first pie shell in 9” pie pan. Mix flour, sugar, and apple pie spice in mixing bowl.
- In a separate bowl, stir lemon juice on to apple slices. Pour apples into the flour mixture.
- Use your hands to roll the apples around to make sure they are coated well (this makes all recipes better).
- Pour coated apples into the pie crust, these will be stacked high). Place small pats of butter around the top of the apples.
- Cover with second pie crust and fold pie crusts together. You can use a fork to press the crust together if you are fancy. Use a fork to poke holes into the top of the pie crust then sprinkle top with sugar. Bake at 350 degrees until brown , 45-60 minutes depending on your oven.
